Spiced Peach Pie

I used a frozen pie crust on this one.  But a pâte brisée would also work nicely.

Ingredients:
10 medium peaches (or two big cans)
3/4 cup of water, or juice from can
1/2 cup baker's sugar
1/2 cup brown sugar
3 tablespoons cornstarch
1 teaspoon cinnamon
1 teaspoon cardamon

Directions:
Peel and chop the peaches (half-slices).
Take a quarter of the peaches and add to blender with the rest of the ingredients.
Blend until smooth.
Pour into sauce pan and bring to boil over medium heat, stirring constantly.
Reduce heat and stir for 8 minutes.
Remove from heat.
Stir in remaining peaches and pour into crust.
Place in refrigerator for at least 4 hours.

Avocado Pie

Use a pre-made graham cracker crust, or make your own if you feel ambitious.

Ingredients:
2 avocados
1 package of cream cheese
1 14oz can of sweetened condensed milk
the juice of 2 limes
the juice of 1 lemon

Directions:
Half and pit the avocados.  Remove from skin and chop.
Add room temperature cream cheese, condensed milk, lime juice and lemon juice.
Mix until smooth.
Pour into crust.
Let sit in refrigerator for at least 4 hours, overnight is best.
